3 large bunches parsley, finely chopped
1 small bunch mint, finely chopped
3 tomatoes, diced
2–3 green onions, sliced
¼ cup fine bulgur (optional; traditional but minimal)
Juice of 2 lemons
3–4 tbsp extra virgin olive oil
Salt to taste

Rinse parsley and mint, dry thoroughly, and chop finely.
Soak bulgur for 5 minutes, then squeeze dry.
Combine all vegetables in a large bowl.
Add lemon juice, olive oil, and salt.
